David Gunawan
Executive Chef, West
David grew up in Singapore; a great culinary intersection of diverse cuisines. He moved to San Francisco, where he witnessed and became fascinated by the collusion of classic techniques and west coast ingredients. Unusually for an aspiring chef, he then attended Purdue University in Indiana where he graduated with a bachelor’s degree in civil engineering.
Form soon followed function, when he attended Kendall College, a leading culinary school in Chicago and then Vancouver Community College. Back in Chicago, he studied under chef Carrie Nahabedian at Naha, then with Chris Nugent at Les Nomades.
David made a calculated move to Vancouver, as he says, “to be as close as possible to farmers and suppliers who care, who match my respect for ingredients. I find our culinary environment here deeply inspiring.”
